1/4 cup freshly ground REAL Coffee (not instant and not de-caf)
1/8 cup Brown sugar
1/8 cup Kosher Salt
1/4 cup COARSELY ground Black Pepper.
1/8 cup Garlic powder (no cheap crap…please)
Extra Virgin Olive Oil
Your Favorite Steaks

Brush steaks with olive oil and cover all sides with a THICK coat of dry mix. Heat grill to about 1000 degrees and place steaks on rack. Turn often until done.

CHILI

1-lb. Buffalo Burger (Publix has the best) (you city folks may use ground chuck)
1-Can Bush’s Chili Beans
1-Can Muir Glen organic “Fire Roasted” diced, or crushed Tomatoes (Kroger Organic dept.)
½ jar of good mild salsa (Muir Glen is best)
1-Yellow Onion, chopped (Vidalia if possible)
1-Bell Pepper, chopped
3-Bay Leaves
1-tsp. Garlic Powder
1-tsp. Seasoned Salt  www.pelicanbayltd.com (also can purchase at Nora Mill, Helen, GA)
1-pack “Simply Organic” Chili Seasoning (Whole Foods in Atlanta, or order off the net)
1-tsp. Each of Parsley, Oregano, Basil, Thyme, Cilantro
1-tbl. Worcestershire Marinade
2-tbl. Log Cabin syrup
1/2- bottle of Beer (not that green beer)

Scramble beef in deep iron skillet till almost done. Add onions and bell pepper. Cook some more. If you use that cheap regular hamburger, pour off any grease. Dump the rest of the stuff in the iron skillet and bring to boil. Cover and let simmer on LOW for about 1 hour. Stir often, as it may stick if the heat is TOO high. Burnt chili ain’t no good.
Serve with onion garlic Texas toast, or Southern cornbread.

Eddie’s Fried Catfish

1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
3 teaspoons salt
1 teaspoon ground red pepper
1 teaspoon garlic powder
1/2 teaspoon black pepper
Texas Pete
8 farm raised catfish fillets
Vegetable oil, for deep frying
Marinade Catfish 30 min. in Texas Pete
Mix cornmeal, flour, salt, red pepper, garlic powder and black pepper in a shallow bowl. Dredge catfish fillets in flour mixture, shaking off excess.
Fill a deep fryer, or large deep skillet half full with oil and heat to 375 degrees. Fry fish 3 to 4 minutes on each side or until golden brown. Drain on paper towels.

Serve with puppies and coleslaw

2 eggs, slightly beaten
1 medium onion, chopped fine
3/4 cup BEER
2 teaspoons baking powder
1 teaspoon garlic powder
1 teaspoon parsley
1/4 teaspoon baking soda
1 1/2 teaspoon salt
1 tablespoon sugar
2 cups plain yellow cornmeal
1/4 cup all purpose flour
Vegetable oil, for deep frying
Combine eggs, onion, and milk together in a mixing bowl.
Mix baking powder, baking soda, salt, sugar, cornmeal, other dry ingredients, and flour together.
Then mix the dry ingredients with the milk mixture. Blend well.
Drop by spoonfuls into hot oil and cook until golden brown.
Serve with Catfish and coleslaw…and later…lie back and howl at the
MOON
Just Hamburger Steaks

Serves 4 men or 6 cowgirls

Combine:
2 pounds of organic ground beef
¼ cup Lea & Perrins Worchestershire Sauce, Tangy, Robust, Meat Marinade
1 tablespoon Garlic powder
1 Vidalia onion (large)
1 cup seasoned (crushed ) croutons
¼ cup extra virgin olive oil.

Place on hot charcoal grill.
Remove at 160 degrees.
Top with ketchup and mayo or you favorite topping.

PECOS TEXAS BEANS


4 slices of Loretta Lynn Ham, cut in small pieces
3 tablespoons extra virgin olive oil
1 cup minced yellow onions
1/4 cup minced celery
1/4 cup minced green bell pepper
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon dried Mexican oregano
1/4 teaspoon dried thyme leaves
2 bay leaves
1 tablespoon minced garlic
1 pound navy beans, rinsed, picked over, soaked overnight and drained
8 cups organic chicken stock
1 teaspoon salt
1/4 cup minced parsley
In a large, heavy pot, heat the oil over medium-high heat. Add the ham, onions, celery, bell pepper, red pepper flakes, oregano, thyme and bay leaves, and sauté until soft, about 10 minutes. Add the garlic, salt, and sauté for 1 minute. Add the stock and bring to a boil over high heat. Reduce the heat to medium-low and simmer covered for about 15 minutes.
Add the navy beans, parsley, and stir. Continue simmering over medium-low heat for 2 hours, or until the beans are cooked and very tender. Season with salt and continue cooking 15 to 30 minutes, until beans are done. Remove from the heat. Serve with Southern cornbread.

Southern Style Buffalo Mix
(Sloppy Joes)

1 lb. Ground Buffalo or Deer (hamburger for you sissies)
1 chopped onion from Georgia (you know what kind)
1 iron skillet with dash of EVOO (extra virgin olive oil)
Scramble the meat until about 75% done. Place the chopped onion in the iron skillet with the meat and cook until done.
Mix the below and add to the above. Simmer for 15 min.
Serve on buns with mayo.
1 ½-2 cups ketchup
1 tsp sugar
½ tsp each of:
“Lawry’s” seasoned salt
“Flora” granulated garlic
Onion powder
Cilantro
Sage
Parsley
“Frontier” Mexican Seasoning
Oregano
Basil
Dash red pepper flakes

Texas Onion & Garlic Bread


1-loaf TEXAS TOAST
1-Onion, chopped
3 tbl. EXTRA VIRGIN Olive Oil
3 clove of Garlic, crushed
1 tsp. Sugar
½ tsp. Thyme
½ tsp. Black Pepper
1 cup Parmigiano
Heat Olive Oil. Add onions and garlic. After a few minutes add sugar, thyme, and pepper. Cook abt. 15 min. until onions are golden brown.
Bake bread until almost done. Spread above mix on toast and sprinkle with cheese. Place under broiler until done, taste… and howl at the Moon.

Cowboy Chili
1 lb. Buffalo Burger
1 lb. Ground Turkey
2 Onions, chopped
1 Bell Pepper, chopped
2 cans Bush's Chili Beans
1 can diced tomatoes
1 jar salsa
2 cups COFFEE (from that morning)
3 tablespoons Worchestershire
Garlic powder
Thyme, Oregano, 2-bay leaves, basil, and parsley.
1 pack "Simply Organic" vegetarian chili seasoning.
1 pack "simply Organic" spicy chili seasoning.
In large cast iron pot, scramble burger and turkey, add worchestershire.
Add onions and bell peppers, saute.
Add the rest, bring to boil, and SLOW simmer for 1 hour. Do NOT burn.
Sleep outdoors!
